Super People, Super Memories

I have to admit, I really could care less about the super bowl. Now the commercials I usually enjoy, but it is the people that mean the most.


There is nothing like looking around at your home and seeing people laugh, cheer, and just enjoying themselves. This year when I sent out my super bowl invite (we have been hosting super bowl for 6 years), it was titled Super Bowl with Super People. I looked over at my husband as he was reading his computer when he got the invite, and he laughed. I said what is funny, he replied, that's cute. But that is how I feel about the people that we encounter. They are super! The game in the long run will mean nothing to us common folk, but the memories we create with the people that was with us,  is the joy that will last. Talking, laughing, gossiping (and you know if you are not here you will be talked about, fair warning) and just enjoying each other's company. Fellowship. How amazing to think we get to fellowship. The dictionary says fellowship is: the condition of sharing similar interests, ideals, or experiences, as by reason of profession, religion, or nationality. I say fellowship is love, caring, sharing, memories, tears and laugher. I give great thanks to beautiful times of fellowship, whether it be at church, dinner, or a super bowl game! Here is to Super People in your life!
Now I have not even mentioned the food we had: homemade chilli, dips, chips, tacos, chimis, wings (of course wings), homemade peanut butter cups and chocolate covered cherries. Look at some of the samplings:

Ok so now for my recipe: BLT Bites. These were really easy, cute and so tasty.

BLT Bites
Package of small (tommy, cherry, etc) tomatoes
Spinach Leaves
Bacon
4 oz (half brick) light cream cheese
1/4 light mayo
1 teaspoon basil
cut bacon in 1" squares, fry, place on paper towels, use as much bacon as you have tomatoes
Cut spinach leaves in half (some larger leaves will have to be cut smaller)
mix cream cheese, mayo and basil, refrigerate until ready to use
cut tomato almost all the way through, spoon about 1/2 tsp cream cheese mixture inside opening
place spinach and bacon on top cc mixture and toothpick to hold it all together
If there is left over spread, use it for sandwiches, or add it to corn and mix, yum!
This is such a simple recipe and delicious, enjoy!!!
