Chicken Cordon Bleu Casserole




Many know, I have started a Journey with Pampered Chef. I have been buying and using their products for 25 years. I had often wanted to join but was waiting to see how I could serve God in doing so.
I love cooking, creating and fellowshiping. So I have taken my love of God and Hospitality and combined them in mentoring other women to be all God wants them to be. 
Today I will be sharing a simple, delicious recipe that takes such a short amount of time to make.

Chicken Cordon Bleu Casserole

1 lb. Pasta (I used radiatore-you could use any fun shaped pasta)
2 Chicken Breasts, cooked and cubed (I cooked in my Rockcrok in the microwave for about 8 minutes with lid on and used Salad Choppers to cut))
1 cup Ham, cooked and cubed
1 1/2 cups Milk
8 oz. Cream Cheese (softened)
2 Tbsp. Dried Minced Onion
2 cups Swiss Cheese, shredded
Salt
Pepper
Cayenne Pepper
1 cup Panko Crumbs
1/2 cup Butter, melted 
Cook penne pasta (with about an inch of water above) in rockcroc or stone casserole dish with lid on in the microwave for 15 minutes. Drain in Stainless Mesh Colander, return to Rockcroc with chicken and ham.
Preheat the broiler. 
In a medium saucepan, combine the milk, cream cheese and minced onion over low-medium heat. Cook, stirring frequently, until it becomes a smooth texture (about 5 minutes). Stir into the pasta mixture. Stir in the Swiss cheese and season with salt and pepper to taste.
Top with Panko crumbs. Pour melted butter over crumbs and broil until browned (2 minutes).
