Rain, Rain Go Away... Maybe not..... And some Watermelon Salsa





Living in Florida, summer and rain goes hand in hand. I personally LOVE the rain, the bigger the storm, the better.

There is something about being reminded about God's power that is amazing. Maybe it is the roaring thunder, the magnificent light shows, the dancing of the water as it hits the walkways. Maybe it is the after, how everything sparkles and glows, when the sun breaks through the clouds. And in Florida, it can be raining in the front yard and Sunshining in the back. Glorious anyway you look at it. 
Summer is also a time for gatherings, field trips, and family. Seems we have more time together in the summer. When school starts up, we are so very rushed that time flies. Summer does too at our house, but at least we get to sneak in a little fun.
I discovered a wonderful treat that I am going to share today. Watermelon Salsa. Now before you discount it, try it. It is AMAZING!! I love salsas, on everything, yum. But this salsa, don't tell anyone, I eat with a spoon. I have just gotten a bowl out and scooped some in and ate it up!!! Everyone that has had it so far, thinks is it wonderful! And with the prices of tomatoes, the watermelon is much cheaper and it holds together better. Enjoy, give me your feed back!!!
WaterMelon Salsa

YUM
1 medium seedless watermelon
1 large red onion
1/2 cup diced jalapenos (use more or less to your liking)
1 bunch of fresh cilantro
appx 2 tablespoons lime juice
one tablespoon kosher salt

This will make a large batch, adjust for smaller portions


dice watermelon in small bite sized pieces



dice onion even smaller
remove stems of cilantro, roll up leaves, hold tightly and cut finely
chop jalapenos finely





mix together all ingredients, taste test to see if you need more salt (doubtful) or lemon juice.
As it sits, drain some of the juice, use a slotted spoon to serve
Eat with chips or pitas or by itself!!!
